普寧豆醬焗雞件, 白灼西蘭椰菜花, 南瓜排骨魚湯 (免煎魚版)

普寧豆醬焗雞件

 

材料:   半隻

        2

醃料: 薑汁  1湯匙     

               1湯匙

普寧豆醬  1湯匙

 

調味料:  普寧豆醬  2-3湯匙

               老抽  1湯匙        

                 少許 

烹調步驟:

(1) 雞洗淨斬件, 用醃料醃1小時

(2) 燒紅鑊, 下少少油, 加入雞件煎至微微金黃, 用廚房紙吸走多餘油份

(3) 下薑和普寧豆醬爆香

(4) 加入半杯水和餘下調味料煮滾

(5) 蓋上鑊蓋, 小火焗約10-15分鐘直至水份收乾即成

南瓜排骨魚湯 (免煎魚版)                       

材料: 南瓜  1磅       

          排骨  300g     

          任何大骨魚類      

            2片     

            1.5-2L 

烹調步驟:

(1) 南瓜切件

(2) 排骨用鹽醃15分鐘

(3) 魚洗淨抹乾

(4) 煲滾水, 加入薑片, 先加入南瓜和排骨

**15L以上的煲, 因為要蓋上煲蓋大火滾, 用大煲以免滾瀉

(5) 將魚放上蔬菜面 (這樣可盡量保持魚完整)

(6) 蓋上煲蓋, 中大火煲最少30分鐘, 開蓋後先慢慢將魚取出上碟, 再下鹽在湯中調味便可. 

小貼士:

(1) 這個是免煎魚版的魚湯, 專為怕油煙的孕婦和懶人而設, 這方法煲出來的魚湯是不會變白的, 但一樣鮮甜又有營養

(2) 想魚湯變雪白, 只須先用熱鑊煎魚至金黃, 趁熱用作煲湯便可

(3) 煲這個魚湯, 因為不會煎魚, 魚肉便容易散, 所以最好用大眼雞 (木棉魚) 或鯇魚腩, 也可以用石班仔

(4) 喝魚湯最怕有骨, 這是因為煲的時候, 很多人都會用湯勺不斷攪動, 那麼魚便散, 骨便掉進湯中. 其實煲魚湯是完全不用攪動的, 而且只要放材料時先放蔬菜, 然後將魚放上面, 魚還可保持完整呢!

(5) 家裡有小孩和老人家的話, 還是用煲魚湯袋比較安全.

Hello, My Honey Lady,

Hey!!! Please ask youself when was the last time that your "Husband" called you as " Honey".Well, that is what we called as: "Cultural Difference" in U.S. It took me a long long time to accept this culture.

To the Americans, even if you are by now over 60 years old, as an American old lady here, your husband still will call you as " Sweety" or "Honey", but not the Asian people who live in this country.

Did you talk with your husband about what he will do together with your son later: Hunting in the Wild mountains, ( not possible in Hk. since you can not buy guns in HK.), SCUBA diving & Spear Fishing with your son, or Racing Cars here at our highways.

Those were my dreams when my son, Lonnie was born on Aug 15th 1986.Now he is studying his Doctorate (PHD) degree in Tennessee State.
